This was a Pinterest recipe kind of weekend, as well as 2 other food items that have been put off far too long.

Note- none of the Pinterest pictures are mine. I didn’t bother to take pics of any of this as it wasn’t unique enough.

Saturday morning we started with Bacon Pancakes. Basically cook bacon (we used vegetarian bacon, obviously) and then pour pancake batter over them. They were good, Chris was all for it and I would make them again with one minor change. First I would pour a thin layer of batter, then lay the bacon down, then another thin layer of batter on top. I would rather have the bacon sandwiched in the pancake.

The rest of Saturday was spent going to 4 grocery stores to stock up for the week. That included one store specifically to buy beer in a bottle that congratulates the Kings on their championship. We also went to a vegetarian grocery which we had just learned about. We had high hopes and it certainly had a ton of stuff, but a lot of it was designed for Asian cooking- as in the labels didn’t have a lot of English. Also, a lot of it was vegetarian “fish” which I’ve never found particularly good. But we still managed to find a few things and now that we know what kind of items the store has, I could probably make another trip and match it to my grocery list better.

Today at lunch I made Garlic Parmesan Edamame. I say they were okay, Tabi and Chris really liked them, Daisy was out. In general I really like edamame, just felt I should have perhaps used flaked sea salt or kosher salt. I’ll definitely try them again, though with the amount of oil this calls for, don’t fool yourself into thinking this is a healthy snack.

After lunch, we took a break from Pinterest recipes and I made orange sorbet while Tabitha made fortune cookies. They both turned out great! We’ve had an ice cream maker for as long as we’ve been married, probably, but it hasn’t been used in a good 10 years. I’ve said for the last 2 years that if it didn’t get used, it needed to be donated. Finally made good on that today! I don’t have instructions or recipes that aren’t in grams so Google to the rescue! Really easy though and man do we love the sorbet. Definitely going to make more and more experimenting with different flavors.

Now Tabitha was making fortune cookies for a Girl Scout badge. She’s been meaning to do it for a couple months and finally got around to it. She halved the reciped to avoid having to write out 36 fortunes, but put in a bit too much butter so they were spongy instead of super crisp. Frankly, they were better than any packaged ones! We will be making them again as well as they were pretty easy and it’s fun to get fortunes.

For dinner we had a BBQ “pork” that I bought at the vegetarian store. Man was it tasty as all get out. It was just like what you would get in pork fried rice. I’ll make a trip out there just for more and use it different ways. But along with the pork we had Salt and Vinegar Fingerling Potatoes. These will so be made again. Tabi, my anglophile, loved that she had “chips” as they were cooked in malt vinegar. I wouldn’t say they were much like chips at all, which I think are more french fry-ish, but they were so darn good. Daisy does not like potatoes in any form (except french fries), but these she completely finished and asked for more.

So tomorrow morning I’ll get a good long workout in to make up for this weekend. But oh so worth it!

    We do that too, shop at multiple grocery stores. For us it’s three, sometimes 4, even the same chain carries different items at both locations which is annoying. We also have an ice cream maker we’ve only used once in a decade. It was a Father’s Day Gift once upon a time. I keep wanting to donate it but T stops me from doing it promising to use it but he never does.
